This vegan soup recipe came about when I was trying to use up some vegetables when our refrigerator broke. I had made soups with roasted vegetables before, and none of them came out very good. So I didn't have very high hopes for this one. But the result was one of the best soups I've ever made, so I rushed to write the recipe down. Here it is.

My father had made a roasted red pepper soup in the past that was delicious, but when I tried to make a veganized version, it was clear that the cream he used had been a major part of the taste, so my version was flat.

This time I hoped the addition of carrots, celery and lots of garlic would add depth of flavor. Roasting the garlic, or most of it, mellowed the taste and allowed it to be more of a background note, as opposed to singing lead.

The result is a velvety, deep orange soup with sweetness from the caramelized vegetables coming through. There is nothing like a bowl of creamy, smooth soup to bring you warmth and comfort.

I will definitely be making this soup again!

Vegan Roasted Vegetable Soup

1/2 kabocha

2 carrots

1 onion

10 cloves garlic

2 red peppers or equivalent (I used 8-10 smaller ones)

olive oil

2 TBS extra virgin olive oil

2 stalks celery, chopped

2 cloves garlic, chopped

5-6 cups water

salt to taste

2 yukon gold potatoes, diced

1-2 TBS lemon juice

Remove the seeds from the kabocha and cut off the skin. Cut it into smallish chunks. Place it into a 9 x 13 inch pan. Drizzle with olive oil. Stir to mix.

Cut the carrots into smallish chunks. Remove the skin from the onion and cut it into wedges. Place the carrots, onion, peppers (leave whole) and garlic (keep the skins on) into another 9 x 13 inch pan. Drizzle with olive oil (don't skimp on this, or your garlic will end up like little rocks.) Stir to mix.

Place both pans in an oven and bake at 375 degrees F for about 50-60 minutes, stirring once halfway through.

I put the pan with the peppers on the top shelf, so they would get more heat, because I wanted them to get caramelized, adding to the flavor.

Bake until the peppers and maybe some of the onions have a dark brownish color on the surface.

Don't burn them, although you definitely want some of that dark caramelized or charred-ness, to impart smoky, rich flavor.

When the vegetables are done, in a large pot on the stove, sauté celery and another 2 cloves of garlic in the 2 TBS olive oil.

While those are cooking, remove the stems from the roasted peppers, and slip the skins off the roasted garlic cloves. You don't need to take the skin off the peppers.

Dump all the roasted vegetables into the pot, along with the potatoes, water and salt. Cover and boil until the potatoes are done, about 15 minutes.

Puree the soup in batches in a blender. Be sure to leave the blender cover ajar and cover it with a dishtowel as you blend. Otherwise, if you cover the blender completely, the steam from the hot food inside will cause an explosion when you turn it on.

Alternately, you could let the mixture cool somewhat before blending, but again, be careful when blending hot liquids. I prefer to leave the lid ajar anyway, just to be sure.

Add the lemon juice. Adjust the soup, adding more water to thin it, if necessary, or more salt or lemon juice, to suit your taste.

Serve it with a nice green salad and some crusty, whole grain bread.

Some people think vegan food is bland, or think you need to add chicken stock, cream, or butter to impart flavor. Try this recipe for vegan roasted vegetable soup and see if this doesn't make you change your mind.

It is hard to pin down which countries produce specific types of coffee, but there are some common ones. Kenya is known for its darker coffees while Colombian typically has a more floral taste, which is different still from the Yemen Mocha which is quite winey.

There is also a very specific roasting scale. Coffees vary in roasts from very light to very dark. The darkest of course being Espresso. To achieve the best taste from the coffee it is important to determine which grind suits your coffee maker. The same bean can also be roasted differently, so determine which coffee you like as well as the roast.

The typical measurement when making coffee is about two tablespoons per every six ounces of water. Although everyone does like it made specific to their own tastes. The water should be very close to the 200 degree Fahrenheit mark; although, the water temperature can be changed specific to certain recipes.

The coffee's profile contains several different elements which should be taken into consideration. First is the level of acid. The acid is the tartness or the tingle that is felt on the sides of the tongue. The level of acidity often depends on the aging process. Then there is the aroma. The aroma is the scent or the vapors that the coffee gives off. Third, there is the bitterness. The bitter taste of coffee comes from the caffeine as well as the quality of the bean. The bitterness is detected at the back of the tongue when the coffee is whirled around the mouth. Then there is the body of the coffee. The body is how thick or light the coffee feels in the mouth. There is also the nuttiness, although some coffees have no nuttiness at all. This is said to be a characteristics of low quality beans. There is also a sharpness found with some coffees although, this is very close to the level of acidity. Regardless of what your favorite coffee might be, try and experiment with different methods and flavors. Coffee tasting is most definitely an ultimate experience.

This popular Artisan KitchenAid stand mixer is the standard mixer found in many kitchens around the United States.

This mixer is small, handy and has the ten speed, power, according to the manufacturer to mix up to four loaves at a time, nine dozen cookies or seven pounds of mashed potatoes. Originally, this mixer has a mixing head for mixing and adjust the cooking in general.

In my kitchen, this mixer was my first stand mixer.

From what I've discovered that there was a lot of issues very well designed and thought by this mixer.

One of the first things I like about this mixer is turning heads in practice. When I tried to mix in a little flour or 'chaotic, it was beautiful, more space to work with instead of the mixer, giving a dish that really matters, does not have to work the head.

Oftensimply is not enough space for the item you're looking for, the dough in the bowl with little space is provided in the form. It is usually said quite chaotic and, frankly, I do not know as a dirty kitchen.

Another good thing about the KitchenAid Artisan mixer is that he has a closing head from bobbing around him and then to keep the dough is more difficult.

Although it can be to mix all the ingredients to the bowl to fill the time made, the mixture is very high at the sides and can easily overturn. So I always turn the recipes for smaller or larger do this in two batches.

Overall this is a great mixer for cooks every dayjust starting out or those who have many years of experience under her apron, but we buy them in a blender base.
